Hi and thanks for the reply.
Yes the VMware tools are installed and up to date. I just checked to make sure and the installed version is VMware Tools v9.0 and it says the service is running.
There is enough free space on the datastore. There is approximately 800GB free on this datastore. Oddly enough I can increase the disk size of other VM's on the same datastore. AFAIK this is the only VM with the issue and it's seemingly not any different than the other VM's other than that I've upgraded the hardware to v9 which was done during my efforts to resolve this issue. When the hardware level was at v7 I still had the issue so I was hoping that upgrading to v9 would help but it hasn't.
This server datastore is running VMFS 5.58. I'm aware of the VMFS block size but if I remember correctly the limitation is 127gb for the old VMFS version. This virtual disk is only at 60gb and I can't even go to 61gb. It's simply greyed out. The brand new thin provision disk I just added to this VM (to see if I could increase the size) is also greyed out so I don't think it's a problem with the original 60gb vmdk.
I honestly have no idea what the problem could be but thanks for the input. I'm open to any additional suggestions.
