Every server and application has its own unique workload profile. An Exchnage server in company A will have a different workload profile to an Exchange server in company B, the same for SQL, Sharepoint, File and Print ....etc To understand the consolidation ratio you need to perform an analysis using a tool such as VMware Capacity Planner - done via a reseller or Platespin Powerrecon - you can purchase and run this yourself.
